Salmon With Watercress Sauce

We all know that salmon is a great source of omega 3, an essential fat for your health.
This delicious French recipe gives you a true energy boost. It’s low in calories and high in antioxidants. A quick and easy dish to make during those busy weeknights.

Steps

  • Clean and wash the watercress.

  • In a medium-size saucepan, melt the butter

  • Once melted, pour in the broth and season with salt and pepper

  • Add the lemon juice and cook on medium heat for 10 minutes

  • Add the cream, remove from heat and set aside

  • Season the salmon filets on both sides with salt and pepper

  • Grill, without any grease, skin side up, in a non-stick skillet for 8 -10 minutes

  • If necessary, turn over the filets and slightly cook them on top

  • Place the watercress mixture in a blender or an emulsion blender and blend until nice and smooth

  • Divide the watercress sauce on the bottom of two deep plates and gently place the salmon filets on top.

Ingredients

  • 4X salmon filet (skin on) of 175 gr each (1.5 lbs)

  • 2X small bunch of fresh watercress

  • 30 gr of unsalted butter

  • 400 ml cream

  • 800 ml vegetable broth

  • A dash of freshly squeezed lemon juice of 1 lemon

  • Salt & freshly ground black pepper to taste
